8/16/2020 Weekly Meal Plan

0a5e9dab796cea8a07eabe4eb4795b9e.jpgI’ve started doing weekly meal planning on Sundays. It’s easier to do it while I’m writing up the weekly calendar/schedule and prepping the snack box for the week.

I’ve been buying snacks in bulk and only putting weeks worth out in the snack box. It keeps us out of the stores, and its healthier. I’ve been doing this for about 2 months, and I’ve gotten really good at hiding the extra snacks.

I took the kids with me to the grocery store today, and while we picked up a few extra things, overall we were good and stayed within our budget. I did forget to buy cat litter, though, so I’ll be off to Target tomorrow morning.

For those of you that are new to meal planning, I’ve got an easy 101 style post here with super easy tips and steps. After you get that down, here is info about batch or freezer cooking.

I’ve gotten a pretty good inventory of the pantry, freezer, and fridge done (I update it after every shopping trip), so I’m able to plan meals and use up what we’ve got with little waste. I only post our dinner plans for the week, because our other meals are usually the same each day.

Breakfast: Coffee with 1/2 and 1/2  for me, and pancakes or something along those lines for the kids (they love the Kodiak Cakes Mix).  I also keep sandwich Ziploc bags of other frozen fruit on hand to make the kids smoothies when they request them (a few times per week). Berries, peaches, and mangos are pretty popular. recently the Big Kid has been on a protein shake kick in the AM.

Lunches will be whatever the kids want for the time being (Peanut butter sandwiches and baguettes toasted with garlic butter are high on the list as of late). I may make up a cheese pizza and serve that for a few lunches during the week with apple slices (or apple sauce), cheez-its, and milk (as well as some sort of dessert- I made these cookies over the weekend, and they make a good lunch dessert)

Usually, I do a crockpot meal on Mondays, but now that we are home all the time, we’ve been having an odd combination of fully home-cooked, scratch meals, and frozen entrees and veggies. I have been posting our meal plans on Instagram too- As well as pics of stuff we are doing to keep busy.

School starts for us on Wednesday. We are distance learning for the foreseeable future, and while I never imagined I’d be teaching Kindergarten and Special Ed 4th grade at the same time, here we are. The kids are still excited about going back to school, seeing friends via their class Zoom meetings. I am going to try and organize a socially distanced Pokemon hunt with Pokemon Go for some of our classmates and friends who play.

  • Sunday:  Leftovers
  • Monday  Stuffed Peppers, garlic bread, fruit
  • Tuesday: Salad and Sandwiches
  • Wednesday: Stir Fry veggies and chicken
  • Thursday: Pizza Night (pizza and salad or fruit)
  • Friday: Salad and Soup
  • Saturday: leftover fiesta

Please stay safe you guys! The sooner we flatten the curve, the sooner life can go back to normal- whatever that means.

I don’t feel really great (Big kid brought home the new germ du jour from school and it’s felled us all).

For those of you that are new to meal planning, I’ve got an easy 101 style post here with super easy tips and steps. After you get that down, here is info about batch or freezer cooking.

For dinner, when we’ve got busy days (like Mondays), I’ll try and put something in the crockpot in the morning, or pull something I’ve already prepped out that can be quickly cooked. I did a lot of prep for the coming week over the weekend. I cut up the produce, bagged it for meals, made up some smoothie kits, and cut up cantaloupe to have this week. Thanks to some frugal shopping over the weekend, I’ve only spent half the grocery budget for the week. I will probably use it all.

  • Monday: Flautas, Beans, Rice, and Mexican Caesar Salad
  • Tuesday:  Veggie Stir Fry with brown rice
  • Wednesday: Chicken Meatball skillet (new recipe coming up this week)
  • Thursday: Pizza Night – The past few weeks we’ve been doing individual personally topped pizzas- It’s super fun and everyone gets what they want.
  • Friday:  Breakfast for Dinner- Waffles, Poached Eggs, sausage, and fruit salad
  • Saturday: Dinner out! My cousin, his wife, and kiddo are coming from AZ with my Uncle and Aunt. We are having a big family dinner out. At Soupantation!
  • Sunday:   Leftover night

I’m trying to use up a lot of what we have on-hand before I do any shopping for the week. We are running low on milk and veggies, so I’ll hit up Grocery Outlet (I have a $5/$20+ coupon), and Sprouts today after the gym.

I’ve got two melons (watermelon and cantaloupe), so we’ll be having melon a lot this week.

  • Sunday:  Pasta Free Lasagna, and you guessed it- Melon (if there is any left)

The heat has broken! Thank goodness- This week I plan on making brownies, banana bread, and pizza from scratch.

I’ve also got a lot of fresh fruit, so I’ll be making up a huge batch of fruit salad. We’ll be eating it a lot- It’s a great way to get the kids to eat fruit, and it cuts down on food waste.

Family Favorite Recipe: Mountain Man Breakfast Casserole

This is a great old Boy Scout/backpacking recipe. We eat it when we go camping, cooked in a dutch oven. You can cook it at home in a baking dish in the oven if you aren’t out cooking in a field.

  • 1 bag O’Brien Potatoes, approx 28 ounces- defrosted
  • 1 dozen eggs
  • 1/4 cup whole milk
  • 1 lb. bulk breakfast sausage (like Jimmy Dean) cooked, crumbled and patted to absorb the excess oil
  • 2 cups cheddar cheese, divided
  • Salt and pepper, to taste
  • Sour Cream and Salsa (for a topping)

Directions

  1. Mix the sausage,  1 cup of  the cheese, and potatoes in a bowl
  2. Pour sausage/egg/cheese mixture into a 9×11 baking dish
  3. Scramble eggs and milk and pour over sausage/egg/cheese mixture
  4. Top the dish with the remaining 1 c. cheese.
  5. Bake at 350 for 20-35 minutes until the eggs have set and the dish is brown, bubbly and delicious.
  6. Serve with Sour Cream and Salsa.
  7. Serves 8-10 at home 4-6 when camping (fresh air makes you hungry).

If you have any leftovers, it’s great in a warmed tortilla the next morning as a burrito! I’ve also been informed that this is really good with avocado slices on top.

 

Modifications for special dietary concerns:

  • You can make this vegetarian by using soy sausage crumbles.
  • This recipe is naturally gluten-free.
  • This recipe cannot be made vegan.

IT’S SO FREAKING HOT!! It’s supposed to be in the mid-nineties all week, so I am planning on keeping the oven off and cooking on the stovetop only, and/or planning as many cod dishes as I can.

  • Wednesday: Breakfast for dinner-Scrambled Eggs with cheese, flaxseed waffles, fruit salad
  • Thursday: Smoothies and Dave’s Killer Bagels
  • Friday:  Date Night
  • Saturday: Homemade Pizza Night

Summer School is over, so we are enjoying our first “real” week of summer break! Besides our usual weekly appointments, we’ll be checking out the zoo, and the local library has some fun events coming up that we’re checking out!

  • Tuesday:  Leftover Night- I’ve got leftovers of the Orange Chicken I made last night. It was a meal kit from my recent visit to Dream Dinners.
  • Wednesday:  Mexican Cesar Salad with chicken (I’m planing a trip to Costco and I’ll be grabbing a rotisserie chicken)
  • Thursday:  Black Bean Soup and Quesadillas
  • Friday:  Date Night- I’m going to the PMJ Concert with a friend- We’ll stop for tacos after the show.
  • Saturday: Homemade Pizza Night (I have leftover dough in the freezer from last week)
  • Sunday: Bolognese Sauce with Zoodles. I planned on making the sauce last week, but never got around to it.

I also plan on doing some batch cooking this week to get some crockpot meals in the freezer.
