Veggie Soup Recipe- 2/4/2020 is National Soup Day!

cooking--3.jpgI received an email from Olive Garden this morning telling me tomorrow is National Soup Day. WOOO! In the mood for their Zuppa Toscana? Here is my copycat recipe.

I had planned to make veggie soup this week, it’s a perfect way to use up all the bits and bobs of veggies you have hanging around your kitchen.

Here is my No Fail, Easy Peasy Vegetable Soup Recipe. It’s Vegan and Vegetarian as is.

 

Ingredients:

  • 2 quarts Veggie Stock
  • 2 c. onions, diced
  • 1 c. celery, chopped
  • 1 c. carrots, chopped
  • 2 cloves garlic, diced
  • 2 Bell peppers, chopped (your choice of color)
  • 2 T. grapeseed oil or your favorite cooking oil
  • 1 can tomato paste
  • 1 large can (approx. 28 ounce) crushed tomatoes
  • 1 bay leaf
  • 2T. Mural of Flavor
  • Salt and fresh cracked pepper to taste
  • 1-2 yellow crookneck squash or zucchini with skin on, cut into bite-size pieces

 

Directions:

  1. In a large stockpot, saute onion, carrots, bell peppers, and celery until veggies are soft and onions are clear (about 20 minutes).
  2. Add garlic, cook 5-10 minutes until fragrant.
  3. Add Veggie Stock, Tomato paste, crushed tomatoes, herbs, and simmer on medium/low for 30-45 minutes.
  4. Add squash/zucchini and continue to simmer for 10-20 minutes.
  5. Serve with bread (I like Beer Bread). Top with Nutritional Yeast or cheese of your choice.

Feel free to substitute in veggies in the amounts that you have. This recipe is just a guide! Other veggies that go great in soup: potatoes, cabbage, green beans, turnips (cook just like potatoes), kale, and spinach.

Leafy greens are added to the soup about 10-15 minutes before serving. Potatoes and turnips should be peeled, chopped and added during step 3.

Today is National Cheese Day!

Pictures Untouched 006.jpgWhen I announced that today is National Cheese Day, my daughter said, “Really? Can we have cheese for dinner??” And who am I to say no? The kids will be having cheese slices with their dinner tonight, while the grown ups can top their Chicken Chili with shredded cheese, if they so desire.

Fun with National Day: Today is National Argyle Day!

file0001631089542.jpgI bought this calendar a few weeks ago, and it lists several non-holiday “days” each day. I thought I’d share some with you each month.

I love “National Days“- they are so much fun, and some of them are really silly. It’s a great way to get the kids out of a funk, especially when there are no holidays or fun days for a long stretch of time. It’s also a fun way to teach kids little facts. For example, Pancake Day usually coincides with the start of Lent (Shrove Tuesday) .

Today is Argyle day. We are all celebrating by wearing argyle socks. Mr. has a vast array of argyle socks. I bought him these last year.

It’s also national Bubble Bath Day! The kids will be celebrating later with a “disco bath”- that’s a bubble bath with a few glow sticks thrown in. Even the big kid can’t resist a disco bath. In addition to this bubble bath, which the kids love, the big kid is a fan of these bath bombs.

Friday the 10th is Houseplant appreciation day, I’m not sure what we’ll do to celebrate, but if I figure it out, I’ll post about it on Facebook or Instagram.

10/17/19 National Pasta Day!

I didn’t. There aren’t tons of freebies. Like… None.

Olive Garden has some sort of shenanigans going on via Twitter, but ain’t nobody got time for that. IF you sign up for their email club, you can get a free app or dessert.

Who doesn’t love cheese? Ok, so vegans and those who are lactose intolerant, but the rest of us LOVE cheese!

The Melting Pot is celebrating National Cheese Fondue Day April 8-11 with an awesome build your own fondue deal for just $12 per person.

Step 1 – Select Your Cheese Blend: Aged Cheddar and Emmenthaler or Gruyere, Raclette and Fontina or Butterkase and Fontina

Step 2 – Select Your Base: Lager Beer/Bouillon blend, White Wine, Vegetable Bouillon or Redbridge Gluten Free Beer
